🍳 Spinach & Egg Skillet with Cheese

A quick, healthy, and satisfying breakfast or brunch — creamy eggs, tender spinach, and melty cheese all in one pan.


🛒 Ingredients (Serves 1–2)

  • 2 cups fresh spinach (or 1 cup frozen, thawed & drained)
  • 3–4 large eggs
  • 2 tbsp milk or cream (optional, for fluffier eggs)
  • ¼ cup shredded cheese (cheddar, mozzarella, or feta)
  • 1 tbsp butter or olive oil
  • Salt & black pepper, to taste
  • Optional: garlic, onion, or red pepper flakes

🥣 Instructions

1️⃣ Sauté Spinach

  • Heat butter or oil in a small skillet over medium heat.
  • Add spinach (and optional garlic/onion) and cook until wilted (~2–3 minutes).

2️⃣ Add Eggs

  • In a bowl, beat eggs + milk (if using).
  • Pour over spinach in skillet.

3️⃣ Cook Gently

  • Let eggs set around edges (~1–2 minutes).
  • Gently stir or tilt skillet to cook evenly.

4️⃣ Add Cheese

  • Sprinkle cheese on top.
  • Cover skillet briefly until eggs are fully set and cheese melts.

5️⃣ Season & Serve

  • Season with salt, pepper, and optional red pepper flakes.
  • Serve hot with toast or avocado slices.

  • Add cherry tomatoes, olives, and feta.

Spicy Kick

  • Add a pinch of cayenne or sliced jalapeño.
