🧾 Ingredients (makes ~12–15 puffs)

  • 2 cups mashed potatoes (plain or leftover)
  • ½ cup shredded cheddar cheese (optional: mozzarella or Parmesan)
  • 1 egg
  • ¼ cup green onions or chives (chopped, optional)
  • ½ tsp garlic powder (optional)
  • Salt and pepper to taste
  • ½ cup breadcrumbs (for coating)
  • Oil for frying (vegetable, canola, or olive oil)

  1. Prepare the potato mixture
    • In a bowl, combine mashed potatoes, cheese, egg, green onions, garlic powder, salt, and pepper.
    • Mix until well combined and slightly sticky.
  2. Shape the puffs
    • Scoop about 1–2 tablespoons of mixture and roll into small balls or oval shapes.
    • Roll each puff in breadcrumbs to coat evenly.
  3. Fry the puffs
    • Heat 1–2 inches of oil in a skillet over medium heat.
    • Fry puffs in batches, turning occasionally, until golden brown and crispy (3–5 minutes).
    • Drain on paper towels.
  4. Serve
    • Serve hot as a snack, side dish, or appetizer. Great with ketchup, sour cream, or a dipping sauce.

  • Baked option: Preheat oven to 200°C (400°F) and bake puffs on a greased baking sheet for 20–25 minutes, flipping halfway.

  • Flavor boost: Add cooked bacon bits, herbs, or a pinch of paprika to the potato mixture.
