🥔🌭 Crispy Hashbrown Sausage Bites

Perfect for breakfast, brunch, or party appetizers — crispy outside, juicy inside.


🛒 Ingredients (Makes ~20 bites)

  • 2 cups frozen shredded hash browns (thawed & squeezed dry)
  • ½ lb (225g) ground breakfast sausage
  • ½ cup shredded cheddar cheese
  • 1 egg
  • 2 tbsp flour (or breadcrumbs)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • Pinch salt (if sausage isn’t salty)

🥣 Instructions

1️⃣ Prep

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment.

2️⃣ Mix

In a large bowl, combine:

  • Hash browns (very dry — this makes them crispy!)
  • Sausage
  • Cheese
  • Egg
  • Flour
  • Seasonings

Mix until evenly combined.

3️⃣ Shape

Roll into small balls (about 1–1½ inches).
Place slightly spaced on baking sheet.

4️⃣ Bake

Bake 18–22 minutes until:

  • Golden brown outside
  • Sausage fully cooked (internal temp 160°F / 71°C)

For extra crispiness, broil 1–2 minutes at the end.


🔥 Extra Crispy Tips

  • Squeeze hash browns in a clean towel to remove moisture
  • Use a wire rack on baking sheet
  • Spray tops lightly with cooking oil

🍳 Air Fryer Version

  • 375°F (190°C)
  • 10–12 minutes
  • Flip halfway through

Spicy Kick
Add diced jalapeños or red pepper flakes.

Maple Breakfast Style
Mix in 1 tbsp maple syrup.
