Here’s a classic, juicy meatloaf recipe that’s moist, flavorful, and topped with a sweet tangy glaze.


Classic Homemade Meatloaf

Ingredients

Meatloaf

  • 1½ lbs ground beef (80/20 works best)
  • 1 cup breadcrumbs (plain or Italian)
  • 1 egg
  • ½ cup milk
  • ½ cup finely diced onion
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning (optional)

Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard (yellow or Dijon)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet or lightly grease a loaf pan.
  2. In a bowl, mix breadcrumbs and milk. Let sit 2–3 minutes.
  3. Add ground beef, egg, onion, garlic, ketchup, Worcestershire, and seasonings.
    Mix gently—don’t overwork it.
  4. Shape into a loaf on the baking sheet (or press into loaf pan).
  5. Mix glaze ingredients and spread half on top.
  6. Bake 40 minutes, then spread remaining glaze and bake another 10–20 minutes until internal temp reaches 160°F (71°C).
  7. Rest 10 minutes before slicing.

Tips for Extra Moist Meatloaf

  • Use 80/20 beef for best flavor.
  • Add ¼ cup shredded cheddar inside for a cheesy twist.
  • Mix beef and pork (50/50) for richer flavor.
  • Avoid overmixing—it makes meatloaf dense.
