Cauliflower bread

Cauliflower bread is a great low-carb, gluten-free alternative to regular bread. It’s soft, slightly cheesy, and works well for sandwiches or as a side.

Simple Cauliflower Bread

Ingredients

  • 2 cups cauliflower (grated or finely processed)
  • 2 eggs
  • 1/2 cup shredded cheese (mozzarella or cheddar)
  • 2–3 tbsp grated parmesan (optional, for extra flavor)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1 tbsp chopped parsley or coriander (optional)

Instructions

  1. Prep the cauliflower
    Steam or microwave the grated cauliflower for 4–5 minutes until soft. Let it cool, then squeeze out as much water as possible using a clean cloth—this step is crucial.
  2. Mix
    In a bowl, combine cauliflower, eggs, cheese, and seasonings.
  3. Shape
    Spread the mixture on a baking tray lined with parchment paper. Form it into a flat rectangle or small rounds (like sandwich bread slices).
  4. Bake
    Bake at 200°C (400°F) for 20–25 minutes until golden and firm.
  5. Cool slightly
    Let it set before cutting or lifting.

  • Removing moisture is the most important step
  • Cheese helps bind and improve texture
  • Don’t expect it to be exactly like wheat bread—it’s softer and more delicate

  • Crispier: Bake a little longer or flip halfway
