Chicken curry

Chicken curry is a classic, deeply flavorful dish made with slow-cooked onions, tomatoes, and spices. It’s flexible—you can make it dry, semi-gravy, or saucy depending on how you like it.


🍛 Simple Chicken Curry (Desi Style)

Ingredients

  • 1 kg chicken (bone-in preferred)
  • 1/2 cup oil
  • 2 onions (finely sliced or chopped)
  • 1 tbsp ginger-garlic paste
  • 2–3 tomatoes (chopped or blended)
  • 1–1.5 tsp salt (to taste)
  • 1 tsp red chili powder
  • 1/2 tsp turmeric
  • 1 tbsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp black pepper
  • 1 tsp garam masala
  • 1–2 green chilies (optional)
  • Fresh coriander for garnish

🍲 Instructions

1. Fry onions

Heat oil and cook onions until golden brown. This builds the base flavor.

2. Add chicken

Add chicken and sauté until it changes color and slightly browns.

3. Ginger-garlic

Stir in ginger-garlic paste and cook for 1–2 minutes until fragrant.

4. Add spices + tomatoes

Add salt, chili powder, turmeric, coriander, cumin, and tomatoes. Mix well.

5. Bhunai (key step)

Cook on medium-high heat until tomatoes break down and oil separates (10–15 minutes). This is where flavor develops.

6. Simmer

Add 1–2 cups water depending on how much gravy you want. Cover and cook until chicken is tender (15–25 minutes).

7. Finish

Add garam masala and green chilies. Simmer 2–3 minutes. Garnish with fresh coriander.


💡 Tips for best chicken curry

  • Fried onions = deeper flavor (don’t rush this step)
  • Bhunai is essential—cook until oil separates
  • Bone-in chicken gives richer taste
  • Adjust water for dry curry vs gravy
