Chicken noodle soup is simple, comforting, and great when you want something warm, light, and nourishing. It’s basically tender chicken, soft noodles, and a flavorful broth.


🍲 Chicken Noodle Soup

Ingredients

  • 1–2 chicken breasts or 2–3 thighs (bone-in gives better flavor)
  • 1 tbsp oil or butter
  • 1 small onion (chopped)
  • 2 carrots (sliced)
  • 2 celery sticks (optional but classic)
  • 2–3 cloves garlic (minced)
  • 6–7 cups chicken stock or water
  • 1–1.5 cups noodles (egg noodles or any pasta)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or oregano (optional)
  • 1 bay leaf (optional)
  • Fresh parsley or coriander for garnish

🍜 Instructions

  1. Cook the chicken
    In a pot, add chicken, water/stock, salt, pepper, and bay leaf. Simmer 15–20 minutes until chicken is cooked. Remove chicken, shred it, and set aside.
  2. Build the base
    In the same pot, heat oil/butter. Sauté onion, carrots, and celery for 5–7 minutes. Add garlic and cook briefly.
  3. Add broth
    Pour back the strained chicken stock (or continue using the same pot). Bring to a gentle boil.
  4. Cook noodles
    Add noodles and cook until just tender (usually 6–10 minutes depending on type).
  5. Add chicken back
    Stir in shredded chicken and simmer 2–3 minutes.
  6. Finish
    Adjust salt and pepper. Add herbs and remove bay leaf.

  • Bone-in chicken makes the broth richer
  • Don’t overcook noodles—they get mushy quickly
  • Add a splash of lemon juice at the end for freshness
  • For extra richness, add a small knob of butter before serving
