🥓🍔 Bacon Cheeseburger Meatloaf

All the flavors of a bacon cheeseburger in a hearty, comforting meatloaf — juicy beef, melted cheese, and crispy bacon on top.


🛒 Ingredients (Serves 4–6)

Meatloaf:

  • 1.5 lbs (680g) ground beef (80/20 for juiciness)
  • ½ cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper

Filling / Topping:

  • 4–6 slices of cheddar cheese (or your favorite burger cheese)
  • 6 slices bacon (half for topping, half can be chopped into the meat)
  • Optional: ketchup or BBQ sauce for topping

🥣 Instructions

1️⃣ Preheat & Prepare Pan

  • Preheat oven to 375°F (190°C).
  • Line a loaf pan or baking dish with parchment or lightly grease.

2️⃣ Make Meatloaf Mixture

  • In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and optional chopped bacon.
  • Mix gently — don’t overwork or it will be dense.

3️⃣ Assemble Meatloaf

  • Shape half of the meat mixture into a loaf in your pan.
  • Layer cheese slices on top, then cover with remaining meat mixture.
  • Lay bacon strips over the top (crosswise if needed).

4️⃣ Bake

  • Bake 50–60 minutes until internal temp reaches 160°F (71°C).
  • Optional: Brush with ketchup or BBQ sauce in the last 10–15 minutes for a glossy finish.

5️⃣ Rest & Serve

  • Let meatloaf rest 5–10 minutes before slicing.
  • Serve with mashed potatoes, roasted veggies, or a side salad.
