Ingredients (1 loaf)

  • 8 large eggs
  • 8 oz (225 g) ground pork rinds (optional for texture, can use extra eggs instead)
  • 4 oz (115 g) cooked bacon, finely chopped
  • 2 tbsp animal fat (bacon fat, tallow, or ghee)
  • 1 tsp baking powder (optional, helps with slight lift)
  • 1/4 tsp salt (optional)

Optional: 1 oz grated cheese (cheddar or Parmesan) if dairy is tolerated.


Instructions

  1. Preheat oven:
    • 350°F (175°C). Line a loaf pan with parchment or grease well.
  2. Mix wet ingredients:
    • In a bowl, whisk eggs and melted animal fat until combined.
  3. Add solids:
    • Mix in chopped bacon, ground pork rinds (if using), baking powder, and salt.
  4. Pour & bake:
    • Pour mixture into prepared loaf pan. Smooth top.
    • Bake 30–40 minutes until firm and lightly golden.
    • Insert a toothpick in the center; it should come out clean.
  5. Cool & slice:
    • Let cool 10–15 minutes before slicing. Use a serrated knife for neat cuts.
