🍤 Creamy Tuscan Shrimp

🧾 Ingredients (Serves 4)

  • 1 lb large shrimp, peeled and deveined
  • Salt & black pepper, to taste
  • 1 tsp paprika (optional, for color)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, sliced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1–2 cups fresh spinach
  • Fresh basil for garnish (optional)

🔥 Instructions

1. Cook the Shrimp

  • Season shrimp with salt, pepper, and paprika.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook shrimp 1–2 minutes per side until pink and opaque.
  • Remove shrimp and set aside.

2. Make the Sauce

  • In the same skillet, add garlic and cook 30 seconds until fragrant.
  • Stir in sun-dried tomatoes.
  • Pour in chicken broth and heavy cream, simmer 3–5 minutes.

3. Add Cheese & Seasonings

  • Stir in Parmesan and Italian seasoning.
  • Simmer until slightly thickened.

4. Finish

  • Add spinach and cook until wilted.
  • Return shrimp to the pan and heat 1–2 minutes.

5. Serve

  • Over pasta, rice, or with crusty bread.
  • Garnish with fresh basil.

💡 Tips:

  • For extra flavor, deglaze the pan with a splash of white wine before adding cream.
  • Use fire-roasted sun-dried tomatoes for deeper flavor.
  • Don’t overcook shrimp — they continue cooking a bit in the sauce.
