Here’s a hearty, cozy Stuffed Pepper Soup — all the flavor of classic stuffed peppers, no stuffing required 🫑🍲


🫑 Stuffed Pepper Soup

🧾 Ingredients (Serves 4–6)

  • 1 lb ground beef (or ground turkey)
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt & black pepper, to taste
  • 1 cup uncooked white rice
  • 1–2 tsp Worcestershire sauce (optional but great)

🔥 Instructions

1. Brown the Meat

In a large pot over medium heat, cook ground beef until browned.
Drain excess grease if needed.

2. Sauté Vegetables

Add onion and bell peppers. Cook 4–5 minutes until softened.
Stir in garlic and cook 30 seconds.

3. Build the Soup

Add diced tomatoes (with juices), tomato sauce, broth, seasonings, and Worcestershire.
Bring to a simmer.

4. Add Rice

Stir in uncooked rice.
Cover and simmer 15–20 minutes, until rice is tender.

5. Taste & Adjust

Add salt and pepper as needed.


🍽️ Serve With

  • Crusty bread
  • Garlic toast
  • A sprinkle of shredded mozzarella or Parmesan on top

💡 Tips

  • For meal prep: cook rice separately and add when serving (prevents it from soaking up too much broth).
  • For low-carb: swap rice for cauliflower rice (add near the end).
