  • Mac & cheese (baked, cheesy, no shortcuts)
  • Collard greens (slow-simmered with smoked meat)
  • Candied yams
  • Cornbread
  • Black-eyed peas
  • Fried catfish
  • Oxtails or smothered pork chops
  • Gravy on something (non-negotiable)

Flavor rules (very important):
