🍍 Chicken Thighs with Pineapple Tidbits

A sweet-and-savory dish combining tender chicken thighs with juicy pineapple — perfect for a quick, tropical-inspired dinner.


📝 Ingredients

  • 4–6 boneless, skinless chicken thighs
  • 1 (8 oz) can pineapple tidbits, drained (reserve juice)
  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar
  • 1 clove garlic, minced
  • 1 tsp ginger, minced or grated (optional)
  • 1 tbsp vegetable oil or olive oil
  • Salt and pepper to taste
  • Optional: sliced bell peppers or green onions for garnish

👩‍🍳 Instructions

  1. Prepare the chicken:
    Season chicken thighs with salt and pepper.
  2. Brown the chicken:
    Heat oil in a skillet over medium-high heat. Sear chicken thighs 3–4 minutes per side until golden. Remove and set aside.
  3. Make the sauce:
    In the same skillet, add garlic and ginger. Sauté 30 seconds. Stir in pineapple tidbits, pineapple juice, soy sauce, and honey. Bring to a simmer.
  4. Cook chicken in sauce:
    Return chicken thighs to the skillet. Simmer 10–15 minutes, spooning sauce over chicken, until fully cooked (internal temp 165°F / 74°C) and sauce thickens slightly.
  5. Serve:
    Garnish with sliced bell peppers or green onions. Serve over rice, quinoa, or noodles.

  • For extra flavor, marinate chicken in soy sauce, garlic, and pineapple juice for 30 minutes before cooking.
  • Add a dash of red pepper flakes for a sweet-spicy kick.
  • For a baked version, place chicken and sauce in a baking dish and bake at 375°F (190°C) for 25–30 minutes.
