Here’s a simple, hearty Smoked Sausage and Potato Bake—comfort food with minimal prep.

Smoked Sausage and Potato Bake

Serves: 4–6
Prep: 15 min | Bake: ~45 min

Ingredients

  • 1–1½ lb potatoes (Yukon gold or red), diced into 1-inch pieces
  • 12–16 oz smoked sausage (kielbasa, andouille, or beef), sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced (optional)
  • 2–3 cloves garlic, minced
  • 2–3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning (or thyme/oregano)
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • Optional: shredded cheddar or mozzarella, chopped parsley

Instructions

  1. Heat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. Toss potatoes with olive oil, smoked paprika, Italian seasoning, garlic powder, salt, and pepper. Spread in the dish.
  3. Bake potatoes for 20 minutes, stirring once.
  4. Add sausage, onion, bell pepper, and garlic. Toss everything together.
  5. Return to oven and bake another 20–25 minutes, until potatoes are tender and edges are golden.
  6. Optional cheese: Sprinkle on top and bake 5 more minutes until melted.
  7. Finish with parsley and serve hot.

Easy Variations

  • Creamy: Add ½ cup heavy cream or sour cream in the last 10 minutes.
  • Spicy: Use andouille sausage + a pinch of red pepper flakes.
  • Veg boost: Add broccoli, green beans, or Brussels sprouts.
  • One-pan breakfast vibe: Crack a few eggs on top for the last 10 minutes.
