Slow Cooker Sausage and Potatoes

Ingredients (4–6 servings)

  • 1.5 lbs (680 g) smoked sausage or kielbasa, sliced into 1-inch pieces
  • 1.5 lbs (680 g) baby potatoes, halved or quartered
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced (optional)
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil or butter
  • ½ cup (120 ml) chicken broth or water
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the slow cooker
    Place the potatoes, onion, garlic, and bell pepper (if using) in the bottom of the slow cooker. Drizzle with olive oil and sprinkle with paprika, thyme, salt, and pepper. Toss to coat.
  2. Add sausage
    Layer the sliced sausage on top of the vegetables.
  3. Add liquid
    Pour chicken broth or water around the sides (not directly over the sausage) to keep everything moist.
  4. Cook
    Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender and sausage is heated through.
  5. Serve
    Garnish with fresh parsley and serve hot.

  • Add other veggies like carrots, green beans, or zucchini for variety.
  • For extra flavor, use smoked sausage or add a splash of Worcestershire sauce.
  • Leftovers store well in the fridge for 2–3 days.
