Ingredients
- 2–3 large sweet potatoes
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Heat oven to 220°C / 425°F.
- Peel (optional) and cut sweet potatoes into even cubes or wedges.
- Toss with olive oil, salt, and pepper.
- Spread in a single layer on a lined tray (don’t overcrowd).
- Roast 20 minutes, flip, then roast another 15–25 minutes until golden and crispy.
