Here’s a simple, hearty pork chops and potatoes recipe that’s flavorful and easy to make in one pan:


Garlic Herb Pork Chops with Roasted Potatoes (Serves 4)

Ingredients:

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 1.5 lbs baby potatoes or Yukon gold potatoes, halved or quartered
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary (or 1 tbsp fresh, chopped)
  • 1 tsp dried thyme (or 1 tbsp fresh, chopped)
  • Salt and black pepper, to taste
  • Optional: 1 tbsp butter for extra flavor

Instructions:

  1. Preheat oven:
    • 400°F (200°C).
  2. Prep the potatoes:
    • Toss potatoes with 1.5 tbsp olive oil, half the garlic, rosemary, thyme, salt, and pepper.
    • Spread evenly on a baking sheet or ovenproof skillet.
  3. Sear the pork chops:
    • Heat remaining olive oil in a skillet over medium-high heat.
    • Season pork chops with salt and pepper.
    • Sear 2–3 minutes per side until golden brown (they will finish cooking in the oven).
  4. Combine and roast:
    • Arrange seared pork chops among the potatoes.
    • Sprinkle remaining garlic over the top.
    • Roast in the oven 20–25 minutes until pork reaches 145°F (63°C) internally and potatoes are tender.
  5. Optional finish:
    • Add a pat of butter on each pork chop just before serving for extra richness.
    • Let pork rest 3–5 minutes before slicing.

Tip: For even more flavor, marinate pork chops in olive oil, garlic, and herbs for 30 minutes before cooking.
