🥘 Meatballs and Potatoes Skillet

Ingredients (Serves 4)

For the meatballs:

  • 1 lb (≈450 g) ground beef or a mix of beef & pork
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tsp garlic powder or 2 cloves garlic, minced
  • Salt & pepper, to taste

For the potatoes & sauce:

  • 1 lb (≈450 g) small potatoes, diced (Yukon gold or red potatoes work well)
  • 1 medium onion, diced
  • 2 Tbsp olive oil or butter
  • 1 cup beef broth or chicken broth
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • Optional: chopped parsley for garnish

Steps

  1. Make the Meatballs
    • In a bowl, combine ground meat, breadcrumbs, egg, Parmesan, garlic, salt, and pepper.
    • Form into small meatballs, about 1–1.5 inches in diameter.
  2. Brown the Meatballs
    • Heat 1 Tbsp olive oil in a large skillet over medium heat.
    • Brown meatballs on all sides, about 5–6 min. Remove and set aside.
  3. Cook the Potatoes and Onions
    • In the same skillet, add remaining olive oil.
    • Sauté diced potatoes and onion 8–10 min until they start to soften.
  4. Combine & Simmer
    • Return meatballs to the skillet.
    • Pour in broth, sprinkle in thyme or Italian seasoning, and stir gently.
    • Cover and simmer 15–20 min, until potatoes are tender and meatballs are cooked through.
  5. Serve
    • Garnish with chopped parsley.
    • Serve hot as a hearty main dish.

Tips

  • For extra flavor, sear meatballs in butter + oil mix.
  • You can add carrots, peas, or bell peppers for more vegetables.
  • This can also be made in a slow cooker: layer potatoes, onions, and meatballs, pour in broth, and cook on low 6–7 hours.
