Here’s a classic Lattice-Topped Apple Pie recipe—perfectly golden, sweet-tart, and beautifully presented with a woven crust.


Lattice-Topped Apple Pie

Ingredients (9-inch pie)

For the crust (makes 2 crusts)

  • 2 ½ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup (225 g) unsalted butter, cold and cubed
  • 6–8 tbsp ice water

For the filling

  • 6–7 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • ¾ cup (150 g) sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

For the topping

  • 1 egg, beaten (for egg wash)
  • 1 tbsp sugar (optional, for sprinkling)

Instructions

  1. Make the crust
    • In a large bowl, mix flour, salt, and sugar.
    • Cut in cold butter until mixture resembles coarse crumbs.
    • Add ice water, 1 tbsp at a time, until dough comes together.
    • Divide into 2 disks, wrap in plastic, and chill for at least 1 hour.
  2. Prepare the filling
    • In a bowl, toss apple slices with sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract.
  3. Assemble the pie
    • Roll out one disk of dough and fit it into a 9-inch pie pan.
    • Add apple filling evenly.
    • Roll out the second disk of dough and cut into strips for the lattice.
    • Weave the strips over the apples to create a lattice pattern. Trim excess dough and crimp edges.
  4. Finish the pie
    • Brush the lattice and edges with beaten egg.
    • Sprinkle a little sugar on top if desired.
  5. Bake
    • Preheat oven to 375°F (190°C).
    • Bake for 45–55 minutes, until the crust is golden and filling is bubbling.
    • If the edges brown too quickly, cover them with foil after 30 minutes.
  6. Cool and serve
    • Let the pie cool for at least 2 hours to allow the filling to set before slicing.

  • For extra flavor, add a pinch of ground cloves or cardamom to the filling.
  • Use a mix of tart and sweet apples for depth of flavor.
