Ingredients (8-inch cake)

  • 1 ½ cups (225 g) pitted dates, chopped
  • 1 cup (240 ml) boiling water
  • 1 tsp baking soda
  • 1 ½ cups (190 g) all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon (optional)
  • ½ cup (115 g) unsalted butter, softened (or vegetable oil for dairy-free)
  • ¾ cup (150 g) sugar (or coconut sugar)
  • 1 tsp vanilla extract
  • ½ cup (60 g) chopped walnuts

Instructions

  1. Prepare the dates:
    • Place chopped dates in a bowl and pour boiling water over them. Stir in baking soda. Let it sit for 10 minutes until soft and slightly mashed.
  2. Mix dry ingredients:
    • In a separate bowl, sift together flour, baking powder, salt, and cinnamon. Set aside.
  3. Cream butter and sugar:
    • In a large bowl, cream butter and sugar until fluffy. Stir in vanilla extract.
  4. Combine wet and dry ingredients:
    • Gradually mix in the flour mixture alternately with the softened date mixture. Stir until just combined.
  5. Add walnuts:
    • Fold in chopped walnuts.
  6. Bake the cake:
    • Preheat oven to 350°F (175°C).
    • Grease and line an 8-inch round or square cake pan.
    • Pour the batter into the pan and smooth the top.
    • Bake 35–40 minutes, or until a toothpick inserted in the center comes out clean.
