Here’s a simple, refreshing cucumber and tomato salad—perfect as a side or light snack 🥒🍅


🥗 Cucumber & Tomato Salad

Ingredients:

  • 2 cucumbers, sliced or diced
  • 2–3 ripe tomatoes, chopped
  • ½ red onion, thinly sliced (optional)
  • 2 tbsp olive oil
  • 1–2 tsp vinegar or lemon juice
  • Salt & black pepper to taste
  • Fresh herbs (optional: parsley, basil, or cilantro)

Instructions:

  1. Prepare vegetables
    Wash and chop cucumbers and tomatoes. Slice onion if using.
  2. Make the dressing
    In a small bowl, mix olive oil, vinegar or lemon juice, salt, and pepper.
  3. Toss salad
    Combine vegetables in a large bowl. Pour dressing over and toss gently.
  4. Garnish and serve
    Sprinkle fresh herbs on top. Serve immediately, or chill for 15–20 minutes for extra flavor.

  • Add feta cheese for a Mediterranean twist.
  • Include olives or bell peppers for more crunch.
  • Sprinkle garlic powder or minced garlic for a punchy flavor.
