🥬 Collard Greens with Bacon & Onions
Ingredients
- 2 bunches collard greens, washed, stemmed, chopped
- 6–8 slices bacon, chopped
- 1 medium onion, chopped
- 3 cloves garlic (optional but recommended)
- 3–4 cups chicken broth or water
- Black pepper to taste
- Red pepper flakes (optional)
- Salt (add at the end)
- Splash of apple cider or hot pepper vinegar
Directions
- Cook the bacon
In a big pot, cook chopped bacon until crispy.
Remove some bacon if you want it crunchy for topping—leave the grease. - Sauté onions
Add chopped onions to the bacon fat. Cook until soft and lightly golden.
Add garlic and stir for 30 seconds. - Add liquid
Pour in broth/water and black pepper. Bring to a simmer. - Add collards
Add greens in batches, stirring them down as they wilt. - Simmer
Cover and cook on low 45–60 minutes, until tender. - Finish strong
Taste, add salt if needed, splash of vinegar, and stir bacon back in.
