Chicken Parmesan; Chicken Breast

Here’s a classic Chicken Parmesan recipe using chicken breasts—crispy, cheesy, and perfect with pasta or a side salad:


🍗 Chicken Parmesan (Chicken Breast)

Ingredients (Serves 2–4)

  • 2 large chicken breasts (about 1 lb / 450 g)
  • Salt & black pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1–2 cups Italian-style breadcrumbs (or Panko for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 1–2 cups marinara sauce
  • 1–2 cups shredded mozzarella cheese
  • 2 Tbsp olive oil (for frying)
  • Optional: fresh basil or parsley for garnish

Steps

  1. Prep the Chicken
    • Slice chicken breasts in half horizontally if thick, to make even cutlets.
    • Pound lightly with a meat mallet to about 1/2-inch thickness.
    • Season both sides with salt and pepper.
  2. Coat the Chicken
    • Place flour in a shallow bowl.
    • Beat eggs in another bowl.
    • In a third bowl, mix breadcrumbs and Parmesan cheese.
    • Dredge each chicken breast: first in flour, then egg, then breadcrumb mixture. Press crumbs gently so they stick.
  3. Cook the Chicken
    • Heat olive oil in a skillet over medium heat.
    • Fry chicken 3–4 min per side until golden brown. It doesn’t need to cook through yet; it will finish in the oven.
  4. Assemble for Baking
    • Preheat oven to 375 °F (190 °C).
    • Place fried chicken in a baking dish.
    • Spoon marinara sauce over each piece.
    • Top with shredded mozzarella cheese.
  5. Bake
    • Bake 15–20 min, until chicken is fully cooked (internal temp 165 °F / 74 °C) and cheese is melted and bubbly.
  6. Serve
    • Garnish with fresh basil or parsley.
    • Serve over pasta, rice, or with a side of vegetables.

Tips

  • For extra crispy chicken, use Panko breadcrumbs and fry in a mix of butter + olive oil.
  • You can make this in the air fryer: after breading, spray lightly with oil and cook at 375 °F for 12–15 min, then top with sauce and cheese and air fry 2–3 more minutes until melted.
  • Make ahead: assemble in the baking dish and refrigerate for up to a day before baking.
