Chicken in a crock pot

Here’s a simple and flavorful way to make Chicken in a Crock Pot (Slow Cooker)—perfect for tender, juicy chicken with minimal effort.


Ingredients (Serves 4–6)

  • 4–6 chicken thighs or breasts (bone-in or boneless)
  • 1 onion, sliced
  • 2–3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika or smoked paprika
  • 1 tsp dried thyme or Italian seasoning
  • Optional: 1 cup carrots or potatoes, cut into chunks
  • Optional: 2 tbsp olive oil or butter for added richness

Instructions

  1. Prepare the chicken:
    • Pat chicken dry and season with salt, pepper, paprika, and thyme.
  2. Layer ingredients in the crock pot:
    • Place onions and garlic at the bottom.
    • Add chicken on top.
    • If using, add carrots, potatoes, or other vegetables.
    • Pour chicken broth over everything.
  3. Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is fully cooked (internal temp 165°F / 74°C) and tender.
  4. Optional finishing touches:
    • Remove chicken and vegetables, then reduce the liquid in a saucepan to make a gravy.
    • Serve chicken hot with the cooked vegetables and gravy over rice, mashed potatoes, or noodles.

✅ Tips:

  • For extra flavor, sear the chicken in a skillet for 2–3 minutes per side before adding to the crock pot.
  • Add a splash of lemon juice or a sprinkle of fresh herbs before serving for brightness.
  • Bone-in thighs tend to stay juicier, but boneless works for quicker meals.
