  • 1 cup (200g) sugar
  • 6 tbsp butter (cubed)
  • ½ cup (120ml) heavy cream
  • 1 tsp vanilla extract

1. Prep

  • Preheat oven to 160°C (325°F)
  • Grease and flour a bundt or loaf pan

2. Make the batter

  • Cream butter + cream cheese until smooth (3–5 mins)

  • Add eggs one at a time, mixing well after each
  • Stir in vanilla

3. Dry ingredients

  • In a separate bowl, whisk flour + salt
  • Slowly add to batter, mixing just until combined

4. Bake

  • Pour into pan and smooth top
  • Bake 75–90 minutes or until a toothpick comes out clean
  • Cool in pan 15 minutes, then turn out onto rack
