Seafood bisque 🦐🦀🥣

Seafood bisque is a rich, creamy soup originally from French cuisine. It’s made with shellfish such as shrimp, crab, lobster, or a mix of seafood, blended with aromatic vegetables, stock, and cream to create a smooth, luxurious texture.


Ingredients (Serves 4)

  • 200 g shrimp (peeled and chopped)
  • 150 g crab meat or lobster (optional)
  • 3 tbsp butter
  • 1 small onion (finely chopped)
  • 1 carrot (finely diced)
  • 1 celery stalk (finely diced)
  • 2 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 3 tbsp flour
  • 3 cups seafood or fish stock
  • 1 cup heavy cream
  • ½ cup white cooking wine (optional)
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • Salt & black pepper
  • Fresh parsley for garnish

Instructions

1. Sauté the vegetables

  • Melt butter in a pot over medium heat.
  • Add onion, carrot, celery, and garlic.
  • Cook for 4–5 minutes until soft.

2. Build the base

  • Stir in tomato paste and cook for 1 minute.
  • Add flour and cook another minute to form a thick base.

3. Add liquid

  • Slowly whisk in seafood stock and wine.
  • Simmer for 10–15 minutes to develop flavor.

4. Blend

  • Blend the soup until smooth to create the classic velvety bisque texture.

5. Add seafood & cream

  • Stir in shrimp and crab/lobster.
  • Add cream, paprika, cayenne, salt, and pepper.
  • Simmer 5 minutes until seafood is cooked.

Serving 🍽️

Serve hot with:

  • crusty bread or garlic toast
  • a drizzle of cream
  • chopped parsley or chives

💡 Chef Tip: For deeper flavor, simmer shrimp shells in the stock before making the soup.
