Cheesy potato bites

🧀🥔 Cheesy Potato Bites

Crispy on the outside, cheesy and soft on the inside — perfect as a snack, appetizer, or side dish.


🛒 Ingredients (Makes ~20 bites)

  • 2 cups mashed potatoes (about 2–3 medium potatoes)
  • 1 cup shredded cheddar cheese (or mix of cheeses)
  • 1/4 cup grated Parmesan (optional)
  • 1 egg, beaten
  • 1/2 tsp garlic powder
  • Salt & black pepper, to taste
  • 1/2–3/4 cup breadcrumbs (for coating)
  • 2–3 tbsp oil or melted butter for baking/frying
  • Optional: chopped chives or parsley for garnish

🥣 Instructions

1️⃣ Prepare Mixture

  • In a large bowl, combine mashed potatoes, cheddar, Parmesan, egg, garlic powder, salt, and pepper.
  • Mix until smooth and well combined.

2️⃣ Shape the Bites

  • Scoop small portions (1–2 tbsp) and roll into balls.
  • Roll each ball in breadcrumbs to coat evenly.

3️⃣ Cook the Bites

Oven-Baked:

  • Preheat oven to 400°F (200°C).
  • Place bites on a greased baking sheet and lightly brush with oil or butter.
  • Bake 15–20 minutes until golden and crispy.

Pan-Fried:

  • Heat 2–3 tbsp oil in a skillet over medium heat.
  • Fry bites 2–3 minutes per side until golden brown and crispy.
  • Drain on paper towels.

4️⃣ Serve

  • Serve warm with ketchup, ranch, or sour cream for dipping.
  • Garnish with fresh herbs if desired.

🔥 Tips & Variations

  • Extra Cheesy: Add small cubes of cheese inside each ball for a gooey center.
  • Spicy Kick: Mix in a pinch of cayenne pepper or paprika.
  • Make-Ahead: Assemble and refrigerate; cook directly from chilled.
  • Herby Flavor: Mix in chopped parsley, chives, or thyme into the potato mixture.
