Ingredients (serves 2–3)

  • 1 lb (450 g) chicken breast, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2–3 tbsp olive oil
  • 1 tsp garlic powder (optional)
  • Salt and pepper, to taste
  • 4 slices Provolone cheese (or American cheese)

Instructions

  1. Cook the vegetables
    • Heat 1 tbsp olive oil in a skillet over medium heat.
    • Sauté onions and bell peppers until soft and slightly caramelized, about 5–7 minutes. Remove and set aside.
  2. Cook the chicken
    • In the same skillet, add the remaining oil.
    • Season chicken with salt, pepper, and garlic powder.
    • Cook until golden and fully cooked, about 5–7 minutes.
  3. Combine chicken and vegetables
    • Lower heat and return the sautéed peppers and onions to the skillet. Mix well.
  4. Melt the cheese
    • Lay slices of Provolone over the chicken-vegetable mixture.
    • Cover the skillet for 1–2 minutes until the cheese is melted.
  5. Assemble the sandwich
    • Slice the hoagie rolls lengthwise.
    • Spoon the cheesy chicken and veggie mixture onto the rolls. Serve hot.
