Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
- Cook the meat
In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease. - Season & mix
Stir in taco seasoning, diced tomatoes, beans, and corn. Simmer 3–4 minutes.
Stir in sour cream if using. - Layer
Spread half the crushed corn chips in the bottom of the baking dish.
Spoon meat mixture evenly over chips.
Sprinkle with 1½ cups cheese.
Top with remaining chips and remaining cheese. - Bake
