Ahhh yes 😌🍅 Tomato Soup—comfort in a bowl, creamy or classic, tangy, and perfect with grilled cheese or crusty bread. Here’s a simple, foolproof recipe.

🍅 Classic Tomato Soup

Ingredients (serves 4)

  • 2 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes or whole peeled tomatoes
  • 2 cups vegetable or chicken broth
  • 1 tsp sugar (optional, balances acidity)
  • ½ tsp dried basil or 1 tbsp fresh basil, chopped
  • ½ tsp dried oregano (optional)
  • Salt & pepper to taste
  • Optional: ¼ cup heavy cream for creamy tomato soup

Instructions

  1. Sauté aromatics
    • Heat olive oil or butter in a pot over medium heat.
    • Add onion and cook 5–7 minutes until soft.
    • Add garlic and cook 30 seconds until fragrant.
  2. Add tomatoes & broth
    • Stir in crushed tomatoes and broth.
    • Add sugar, basil, oregano, salt, and pepper.
  3. Simmer
    • Bring to a gentle boil, then reduce heat.
    • Simmer 15–20 minutes, stirring occasionally.
  4. Blend
    • Use an immersion blender to puree until smooth, or carefully transfer to a blender in batches.
  5. Optional creaminess
    • Stir in heavy cream at the end for a creamy version. Heat through, but do not boil.
  6. Serve
    • Garnish with fresh basil, a drizzle of cream, or croutons. Perfect with grilled cheese.

🔥 Pro Tips

  • Flavor boost: Sauté a carrot with onions for natural sweetness.
  • Acidity balance: Sugar or a splash of milk/cream helps mellow tartness.
  • Texture: For chunkier soup, blend partially and leave some tomato pieces.
  • Make ahead: Soup stores well for 2–3 days in the fridge; flavors improve overnight.

Optional variations:

  • Roasted tomato version: Roast fresh tomatoes with garlic and onion before blending.
  • Spicy kick: Add a pinch of red pepper flakes or smoked paprika.
  • Herb-forward: Finish with fresh basil, thyme, or parsley.

This is classic, comforting, and versatile—perfect for any day you want a cozy bowl.

Do you want it classic smooth tomato or rich and creamy?
