Scottish Tablet

Ingredients

  • 4 cups (800 g) granulated sugar
  • 1 cup (240 ml) whole milk

Instructions

1. Prepare Pan

  1. Line an 8×8-inch (20×20 cm) baking dish with parchment or lightly grease it.

2. Cook the Sugar Mixture

  1. In a heavy-bottomed saucepan, combine sugar, milk, and butter.
  2. Stir over medium heat until sugar dissolves.
  3. Bring to a boil, stirring constantly.
  4. Use a candy thermometer or cook until mixture reaches 234–240°F (112–115°C) (soft-ball stage).

3. Beat the Mixture

  1. Remove from heat.
  2. Let cool slightly for a few minutes.
  3. Beat vigorously with a wooden spoon for 8–10 minutes, until the mixture thickens and starts to lose its gloss.

4. Set the Tablet

  1. Pour into prepared pan and smooth the surface with a spatula.
  2. Let cool until firm but still slightly soft.
  3. Score into squares with a knife.
  4. Allow to harden completely at room temperature.

Tips

  • Stir constantly during boiling to prevent burning.
  • Do not rush cooling; beating at the right time is crucial for the crumbly texture.
  • Optional flavors: Add a pinch of salt, a few drops of mint extract, or crushed nuts.
  • Storage: Airtight container at room temperature for up to 2 weeks.
