🍰 Classic Chiffon Cake

Light, airy, and fluffy — a soft cake that’s a cross between a sponge and an oil cake, perfect for birthdays, tea, or a simple dessert.


🛒 Ingredients (8–10 servings)

  • 2 ½ cups (310 g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups (300 g) granulated sugar, divided
  • 7 large eggs, separated
  • ½ cup (120 ml) vegetable oil
  • ¾ cup (180 ml) water or milk
  • 2 tsp vanilla extract
  • ¼ tsp cream of tartar

🥣 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 325°F (160°C).
  • Do not grease the chiffon cake pan; the batter needs to cling to the sides to rise properly.

2️⃣ Mix Dry Ingredients

  • In a bowl, sift together flour, baking powder, salt, and 1 cup sugar.

3️⃣ Mix Wet Ingredients

  • In a separate bowl, whisk egg yolks, oil, water (or milk), and vanilla until smooth.
  • Gradually add dry ingredients and mix until just combined.

4️⃣ Whip Egg Whites

  • In a large clean bowl, beat egg whites and cream of tartar until soft peaks form.
  • Gradually add remaining ½ cup sugar and beat until stiff peaks form.

5️⃣ Fold Egg Whites

  • Gently fold egg whites into the batter in thirds, being careful not to deflate the mixture.

6️⃣ Bake

  • Pour batter into an ungreased 10-inch tube pan.
  • Bake 55–65 minutes, or until a toothpick inserted comes out clean.

7️⃣ Cool

  • Invert the pan immediately and let the cake cool completely upside-down to retain height and fluffiness.
  • Once cool, run a knife around the edges and center tube to release cake.

8️⃣ Serve

  • Dust with powdered sugar, or frost with whipped cream or glaze if desired.
