🥩 Standing Rib Roast (Prime Rib)

Ingredients (serves 6–8)

  • 1 standing rib roast (bone-in, 4–6 lbs for 6–8 servings)
  • 2–3 tbsp olive oil or softened butter
  • 3–4 cloves garlic, minced
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)
  • 1 tsp fresh thyme, chopped (or ½ tsp dried)
  • Optional: 1 tsp onion powder

Instructions

  1. Prep the roast
    • Remove roast from fridge 1–2 hours before cooking to bring to room temperature.
    • Pat dry with paper towels.
  2. Season
    • Mix olive oil/butter, garlic, salt, pepper, rosemary, thyme, and optional onion powder.
    • Rub all over the roast, making sure to get between the bones if possible.
  3. Preheat oven
    • Set oven to 450°F / 230°C for initial searing.
  4. Roast
    • Place roast fat side up on a rack in a roasting pan.
    • Roast at 450°F for 15–20 minutes to create a nice crust.
    • Reduce heat to 325°F / 160°C and continue roasting until desired doneness:
      • Rare: 120–125°F (about 15 min per lb)
      • Medium-Rare: 130–135°F (about 17 min per lb)
      • Medium: 140–145°F (about 19 min per lb)
  5. Rest
    • Remove roast from oven and tent with foil. Let rest 20–30 minutes before carving.
    • Internal temperature will rise ~5°F during resting.
  6. Carve
    • Slice between the bones for individual servings. Serve with au jus or horseradish sauce.
