Ingredients (4 servings)

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • Salt & pepper
  • 1 tbsp olive oil (optional, for searing)
  • 1 onion, sliced
  • 2–3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream (or sour cream for tangier version)
  • 1 tbsp Dijon mustard (optional)
  • 1 tsp paprika (smoked or regular)
  • ½ tsp thyme (dried or fresh)

Instructions

  1. Optional sear
    Heat oil in a pan and sear pork chops 2–3 min per side until golden. Adds flavor but not required.
  2. Layer in slow cooker
    Place onions and garlic at the bottom. Lay pork chops on top. Sprinkle with paprika, thyme, salt, and pepper.
  3. Add liquid
    Pour chicken broth (and mustard if using) over the chops.
  4. Cook low & slow
    • LOW: 6–7 hours
    • HIGH: 3–4 hours
      Until chops are tender and juicy.
  5. Finish with cream
    Stir in heavy cream (or sour cream) about 15–20 min before serving. This makes a creamy, flavorful sauce.
  6. Serve
    Over mashed potatoes, rice, or pasta. Spoon sauce on top.

  • Don’t overcook! Even in a slow cooker, 7+ hours can dry thinner chops.
  • Add mushrooms or bell peppers for extra flavor.
