Slow Cooker Beef and Vegetable Stew

Serves: 4–6

Ingredients

  • 1 ½ pounds (700 g) beef stew meat, cubed
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz / 410 g) diced tomatoes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons tomato paste (optional, for richer flavor)
  • 2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening)

Instructions

  1. Prepare ingredients
    • Chop vegetables and cut beef into bite-sized pieces.
  2. Add to slow cooker
    • Place beef, carrots, potatoes, onion, garlic, broth, tomatoes, salt, pepper, thyme, paprika, and tomato paste into the slow cooker.
  3. Cook
    • Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender and vegetables are cooked through.
  4. Optional thickening
    • About 30 minutes before serving, mix cornstarch and water into a slurry and stir into the stew. Cover and cook until thickened.
  5. Serve
    • Taste and adjust seasoning. Serve hot with crusty bread or over rice.

  • You can swap beef for chicken or pork for a different variation.
  • Add green beans or peas in the last 30 minutes of cooking for extra color and nutrition.
  • For a richer flavor, brown the beef in a skillet before adding to the slow cooker.
