Sausage and peppers

Now we’re talking — sausage and peppers is bold, juicy, and full of flavor. 🌭🫑 It’s perfect on a hoagie roll, over rice, or straight from the skillet.

Here’s a classic Italian-style version:


Sausage and Peppers Skillet

Serves 4

Ingredients

  • 1½ lbs Italian sausage (sweet or hot)
  • 2–3 bell peppers (mix of red, green, yellow), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp red pepper flakes (optional)
  • ½ cup crushed tomatoes or marinara (optional, for saucier version)
  • Salt & black pepper to taste
  • Hoagie rolls (optional, for sandwiches)

Instructions

1. Brown the sausage

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add sausages and cook 6–8 minutes, turning until browned.
  • Remove and slice into thick pieces (or leave whole).

2. Cook the peppers & onions

  • Add remaining oil to the skillet.
  • Add peppers and onions.
  • Cook 8–10 minutes until softened and slightly caramelized.
  • Stir in garlic, oregano, basil, red pepper flakes.

3. Combine

  • Return sausage to skillet.
  • Add crushed tomatoes if using.
  • Simmer 5–10 minutes until sausage is cooked through and flavors blend.

Serve It:

  • On toasted hoagie rolls with melted provolone
  • Over rice or pasta
  • With roasted potatoes
  • Low-carb style in a bowl

Pro Tips

  • For deeper flavor, add a splash of red wine while cooking the peppers.
  • Want smoky? Use grilled sausage instead of pan-fried.
  • Add mushrooms for extra heartiness.
