Oh yes 😌 potato soup—creamy, comforting, and perfect for chilly days. Here’s a classic, hearty version you can make on the stove or slow cooker.


🥔 Classic Potato Soup

Ingredients (4–6 servings)

  • 4–5 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or heavy cream
  • 2–3 slices bacon, cooked and crumbled (optional)
  • 1 cup shredded cheddar cheese (optional)
  • 2 tbsp butter
  • Salt & pepper, to taste
  • Optional garnish: green onions, chives, sour cream

Instructions

  1. Cook aromatics
    • In a large pot, melt butter over medium heat.
    • Sauté onion until soft (~3–4 min). Add garlic, cook 30 sec.
  2. Cook potatoes
    • Add diced potatoes and broth.
    • Bring to a boil, then reduce heat and simmer 15–20 min until potatoes are tender.
  3. Blend (optional)
    • For creamy soup, mash some potatoes in the pot or use an immersion blender to reach desired consistency.
  4. Add cream & season
    • Stir in milk or cream, salt, and pepper. Heat through but don’t boil.
  5. Serve & garnish
    • Top with cheese, bacon, green onions, or a dollop of sour cream.

Pro Tips

  • Extra thick soup: Mash more potatoes or add a roux (1 tbsp butter + 1 tbsp flour) at the start.
  • Make ahead: Soup tastes even better the next day.
  • Variations: Add carrots, celery, or leeks for more flavor.
  • Vegetarian version: Use vegetable broth and skip bacon.
