    • Add yeast mixture and gradually mix in flour until a soft dough forms.
  3. Knead
    • Knead for 8–10 minutes until smooth and elastic.
  4. First rise
    • Place dough in a greased bowl, cover, and let it rise for 1–1.5 hours or until doubled in size.
  5. Shape rolls
    • Punch down dough, divide into 8 portions, and shape into balls. Place on a greased baking tray.
  6. Second rise
    • Cover and let rise for 30–40 minutes until puffy.
  7. Bake
    • Preheat oven to 375°F (190°C).
    • Optional: brush tops with milk or an egg wash for a golden finish.
    • Bake 15–20 minutes until golden brown.
  8. Cool
    • Let rolls cool slightly before serving.

  • Rolls stay soft longer than regular bread because of the potato.
