Roasted Pork Loin with Garlic and Herbs

Serves: 4–6

Ingredients

  • 2–3 pound (900 g–1.4 kg) pork loin
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme (or fresh, chopped)
  • Optional: 1 teaspoon paprika for extra color
  • 1 cup chicken broth (for roasting pan, optional)

Instructions

  1. Preheat the oven
    • Set to 375°F (190°C).
  2. Prepare the pork
    • Pat pork loin dry.
    • Rub with olive oil, garlic, salt, pepper, herbs, and paprika (if using).
  3. Roast
    • Place pork loin on a rack in a roasting pan.
    • Optional: pour chicken broth into the pan to keep it moist.
    • Roast for 20 minutes per pound, or until internal temperature reaches 145°F (63°C).
  4. Rest
    • Remove from oven and tent with foil. Let rest 10–15 minutes before slicing.
    • Resting allows juices to redistribute, keeping the meat tender.
  5. Serve
    • Slice into ½–1 inch thick pieces.
    • Serve with roasted vegetables, mashed potatoes, or a pan sauce made from the drippings.
