🍍 Pineapple Fluff

🛒 Ingredients (Serves 6–8)

  • 1 can (20 oz) crushed pineapple, undrained
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup mini marshmallows
  • ½ cup shredded sweetened coconut (optional)
  • ½ cup chopped pecans or walnuts (optional)
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed

1️⃣ Mix Pineapple & Pudding

  • In a large bowl, stir together crushed pineapple (with juice) and dry pudding mix.
  • Mix well until slightly thickened (about 2 minutes).

2️⃣ Add the Extras

  • Fold in mini marshmallows.
  • Add coconut and nuts if using.

3️⃣ Fold in Whipped Topping

  • Gently fold in whipped topping until fully combined and fluffy.

4️⃣ Chill

  • Cover and refrigerate at least 1 hour before serving (2–3 hours is even better).

🍽️ Serve

  • Serve cold as a dessert or sweet side dish.
  • Garnish with extra coconut, chopped nuts, or maraschino cherries if desired.
