Pie Muffins

“Pie muffins” are a fun hybrid—soft like muffins but with a sweet, jammy or spiced filling like pie. You can make them super simple with pantry ingredients.

🧂 Ingredients

For the batter:

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 egg
  • ½ cup milk
  • ⅓ cup oil or melted butter
  • 1 tsp vanilla extract

For the filling (choose one):

  • Fruit jam (strawberry, blueberry, etc.)
  • Apple pie filling (chopped small)
  • Cherry pie filling

Optional topping:

  • 2 tbsp sugar + ½ tsp cinnamon
  • OR simple crumble (flour + butter + sugar)

🍳 Instructions

1. Preheat & prep
Preheat oven to 180°C (350°F). Line a muffin tin.

2. Make batter
Mix dry ingredients in one bowl. In another, whisk egg, milk, oil, and vanilla. Combine gently (don’t overmix).

3. Fill & layer

  • Add 1 tbsp batter into each cup
  • Add 1 tsp filling in the center
  • Cover with more batter (about ¾ full total)

4. Add topping (optional)
Sprinkle cinnamon sugar or crumble.

5. Bake
Bake 18–22 minutes until golden and set.


🍽️ Flavor Ideas

  • Apple pie muffins: Add cinnamon + tiny apple cubes
  • Blueberry pie muffins: Use blueberry jam + lemon zest
  • Peach pie muffins: Peach filling + pinch of nutmeg

🔥 Tips

  • Keep filling in the center so it doesn’t leak out
  • Don’t overmix batter—muffins stay soft that way
  • Let cool slightly before eating (the filling gets HOT)
