🍫 No-Bake Chocolate Oat Bars

Ingredients (Makes ~16 bars)

  • 2 cups rolled oats
  • 1 cup peanut butter (or almond butter)
  • ½ cup honey or maple syrup
  • ½ cup unsalted butter
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Optional: ¼ cup chopped nuts, shredded coconut, or mini chocolate chips

Instructions

1️⃣ Prepare the Pan

  • Line an 8×8-inch baking pan with parchment paper or lightly grease it.

2️⃣ Make the Oat Base

  • In a medium saucepan, combine peanut butter, honey, and butter.
  • Heat over medium, stirring until melted and smooth.
  • Remove from heat and stir in vanilla extract.
  • Mix in oats (and optional nuts or coconut) until fully coated.
  • Press evenly into the prepared pan.

3️⃣ Add Chocolate Topping

  • In a microwave-safe bowl, melt chocolate chips in 20–30 second intervals, stirring until smooth.
  • Pour over oat layer and spread evenly.

4️⃣ Chill & Set

  • Refrigerate for 1–2 hours or until firm.
  • Remove from pan and cut into bars.

5️⃣ Serve

  • Enjoy as a snack, dessert, or on-the-go treat.
  • Store in an airtight container in the fridge for up to a week.
