  5. Check doneness:
    • Pork: 145°F (63°C)
    • Lamb: 135–140°F (57–60°C) for medium
    • Beef: depends on preference (medium rare 130–135°F / 55°C)
  6. Rest the meat: Remove chops from the pan and let rest 5 minutes before serving.
