Ingredients (serves 4)

  • 2 medium cucumbers, thinly sliced
  • 2–3 medium tomatoes, chopped or sliced
  • 1 small red or white onion, thinly sliced
  • 2–3 tablespoons olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon sugar (optional, balances acidity)
  • Salt and black pepper, to taste
  • 1–2 teaspoons fresh herbs (like parsley, dill, or basil), chopped

Instructions

  1. Prep the Vegetables:
    Wash and slice cucumbers and tomatoes. Thinly slice the onion.
  2. Mix the Marinade:
    In a small bowl, whisk together olive oil, vinegar or lemon juice, sugar (if using), salt, and pepper.
  3. Combine:
    In a large bowl, add cucumbers, tomatoes, and onions. Pour the marinade over the vegetables and toss gently to coat.
  4. Marinate:
    Cover and refrigerate for at least 30 minutes (up to 2–3 hours) to let flavors meld.
  5. Serve:
    Sprinkle with fresh herbs before serving. Optional: add a little feta cheese or olives for extra flavor.

💡 Tips:

  • For extra crunch, you can sprinkle cucumbers with a pinch of salt and let them sit 10 minutes, then drain excess water before mixing.
  • Adding a clove of minced garlic or a dash of chili flakes gives a nice punch.
