Ground Beef and Potato Casserole

Ingredients (6–8 servings)

  • 1 lb (450 g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced potatoes (peeled or unpeeled)
  • 1 can (10.5 oz / 300 g) cream of mushroom soup (or cream of chicken)
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 2 tbsp butter or oil for sautéing

Instructions

  1. Preheat oven
    Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the beef
    In a large skillet, heat butter or oil over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onions are soft. Drain excess fat.
  3. Prepare potatoes
    Boil or microwave diced potatoes for 5–7 minutes until just tender but not mushy. Drain.
  4. Mix casserole
    In a large bowl, combine cooked beef mixture, potatoes, cream of mushroom soup, milk, salt, pepper, and half of the shredded cheese.
  5. Assemble & bake
    Transfer mixture to prepared baking dish. Sprinkle remaining cheese and paprika on top. Bake 25–30 minutes until bubbly and cheese is melted.
  6. Serve
    Let cool 5 minutes before serving. Optional: garnish with chopped parsley or green onions.

Tips

  • For extra flavor, sauté potatoes with butter and garlic before mixing with beef.
  • You can swap cream of mushroom soup with homemade sauce (butter + flour + milk) for a fresher taste.
  • Add vegetables like peas, carrots, or corn for a one-pot meal.
