Golden Crispy Chicken with Parmesan Mushroom Sauce

Crispy Chicken

Ingredients

  • 2 large boneless, skinless chicken breasts (halved horizontally)
  • Salt & black pepper
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 tbsp water
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Olive oil or butter, for frying

Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. Set up breading station:
    • Bowl 1: flour
    • Bowl 2: eggs + water (whisked)
    • Bowl 3: panko, Parmesan, garlic powder, paprika
  3. Dredge chicken in flour, dip in egg, then coat well in panko mixture.
  4. Heat oil in a large skillet over medium-high heat.
  5. Fry chicken 3–4 minutes per side until golden and cooked through.
  6. Transfer to a plate and keep warm.

Parmesan Mushroom Sauce

Ingredients

  • 2 tbsp butter
  • 8 oz (225 g) mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • Salt & black pepper, to taste
  • ½ tsp Italian seasoning or thyme
  • Fresh parsley (optional)

Instructions

  1. In the same skillet, melt butter over medium heat.
  2. Add mushrooms and cook until browned and moisture evaporates (5–6 min).
  3. Stir in garlic; cook 30 seconds.
  4. Pour in chicken broth and simmer 2 minutes.
  5. Add cream and seasoning; simmer until slightly thickened.
  6. Stir in Parmesan until smooth. Season to taste.

To Serve

  • Spoon mushroom sauce generously over crispy chicken.
  • Garnish with parsley and extra Parmesan.
