Ingredients (Serves 4–6)

  • 300–400 g (10–14 oz) spaghetti
  • 2–3 chicken breasts, diced or sliced
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups heavy cream (or half-and-half for lighter version)
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional, for a little heat)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the spaghetti:
    Boil spaghetti according to package instructions until al dente. Drain and set aside.
  2. Cook the chicken:
    In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper. Cook until golden and cooked through (5–7 minutes). Remove and set aside.
  3. Make the garlic Parmesan sauce:
    In the same skillet, add minced garlic and sauté for 30–60 seconds until fragrant. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  4. Add cheese and seasoning:
    Stir in Parmesan cheese and Italian seasoning. Cook for 2–3 minutes until the sauce thickens slightly. Adjust salt, pepper, and red pepper flakes if desired.
  5. Combine:
    Add the cooked chicken and spaghetti to the sauce. Toss gently to coat everything evenly.
  6. Serve:
    Garnish with fresh parsley and extra Parmesan if desired. Serve immediately with a side salad or garlic bread.

  • For extra flavor, sauté mushrooms or spinach along with the garlic.
  • Use freshly grated Parmesan for the creamiest, smoothest sauce.
  • Leftovers reheat well in the microwave or on the stovetop with a splash of cream or milk to loosen the sauce.
