Ohhh this one is a sleeper hit 😄 — garlic parmesan chicken meatloaf is juicy, savory, and way lighter than beef.

Garlic Parmesan Chicken Meatloaf

Ingredients

  • 500 g (1 lb) ground chicken
  • ¾ cup breadcrumbs or panko
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 3–4 cloves garlic, minced
  • ¼ cup milk
  • 2 tbsp melted butter or olive oil
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Optional topping

  • Extra Parmesan
  • Mozzarella cheese
  • Garlic butter drizzle

Instructions

  1. Heat oven to 180°C / 350°F. Lightly grease a loaf pan or line a baking tray.
  2. Mix
    In a large bowl, gently combine all ingredients.
    (Don’t overmix or it’ll be dense.)
  3. Shape
    Form into a loaf or press into loaf pan.
  4. Top it
    Sprinkle extra Parmesan or mozzarella on top if using.
  5. Bake
    Bake for 40–45 minutes until cooked through (internal temp ~74°C / 165°F).
  6. Rest & serve
    Let rest 5–10 minutes before slicing.

Pro tips for juicy meatloaf

  • Use dark-meat ground chicken if available
  • Add 1–2 tbsp Greek yogurt or mayo for extra moisture
  • If browning is light, broil for 2–3 minutes at the end

Serve with

  • Mashed potatoes or roasted potatoes
  • Steamed veggies or green beans
  • A simple garlic sauce or gravy
