Fried rice

Here’s a simple, flavorful Fried Rice recipe — perfect as a side or a main dish. You can customize it with vegetables, meat, or shrimp.


🍚 Classic Fried Rice

Ingredients (Serves 4)

  • 3 cups cooked rice (preferably day-old for best texture)
  • 2–3 tbsp vegetable oil
  • 2 eggs, lightly beaten
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn, bell pepper)
  • 2–3 green onions, sliced
  • 3 tbsp soy sauce (adjust to taste)
  • 1 tsp sesame oil
  • Optional: cooked chicken, shrimp, or pork

Instructions

1️⃣ Prepare the Rice

  • Use cold, day-old rice if possible. This prevents sogginess.
  • Break up any clumps with a fork.

2️⃣ Cook the Eggs

  • Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
  • Pour in beaten eggs and scramble until just set. Remove from skillet and set aside.

3️⃣ Sauté Aromatics and Vegetables

  • Add remaining oil to skillet.
  • Sauté onion and garlic 2–3 minutes until fragrant.
  • Add mixed vegetables and cook another 3–4 minutes until tender.

4️⃣ Add Rice and Protein

  • Add rice and cooked eggs back to the skillet.
  • Stir-fry, breaking up clumps and mixing evenly with vegetables.
  • Add any cooked protein if using.

5️⃣ Season

  • Pour in soy sauce and sesame oil.
  • Toss thoroughly to coat evenly.
  • Stir in green onions at the end.

6️⃣ Serve

  • Serve hot as a side dish or main course.
  • Optional: garnish with extra green onions or sesame seeds.

💡 Tips

  • Use high heat for a slightly crispy texture.
  • Day-old rice works best because it’s drier and fries better.
  • Customize with pineapple, cashews, or chili flakes for variety.
  • Don’t overcrowd the pan; stir-fry in batches if needed.
