Instructions

  1. Preheat Grill or Oven:
    • Grill: medium heat (about 375–400°F / 190–200°C)
    • Oven: 400°F (200°C)
  2. Prepare the Foil Packets:
    • Cut 6–8 large pieces of heavy-duty foil (12–14 inches each).
    • In a large bowl, toss chicken chunks, vegetables, garlic, olive oil, paprika, herbs, salt, and pepper until evenly coated.
  3. Assemble Packets:
    • Divide chicken and vegetable mixture evenly onto each foil sheet.
    • Fold the foil over the mixture and seal tightly to form packets.
  4. Cook:
    • Grill packets 20–25 minutes, flipping halfway through, until chicken is cooked through (165°F / 74°C) and vegetables are tender.
    • Oven: Place packets on a baking sheet and bake 25–30 minutes.
  5. Serve:
    • Carefully open packets (watch out for steam) and garnish with fresh parsley or cilantro.
    • Serve directly in packets or transfer to a serving platter with rice, couscous, or bread.
